Several years ago, the Center for Cultural Research of the Ministry of Culture of Ukraine developed a detailed methodology for identifying elements of intangible cultural heritage. It included the culinary traditions of the Ukrainian people. This publication is the result of many years of painstaking work by the authors, researchers of Ukrainian cultural traditions, who have been engaged in scientific research of their origins in the continuous process of forming the cultural code of the nation and identifying its unique features in the context of European culture. The authors consulted a well-known ethnographer, a specialist at the Institute of Ethnology of the National Academy of Sciences of Ukraine, Lidia Artyukh.
